Instructions

  1. 1. Fill the pot with water and heat it on the burner until it boils.
  2. 2. Using the knife and cutting board, cut the broccoli—stalk and all—into bite-size pieces.
  3. 3. Place the broccoli into the bowl, cover it, and microwave until steamed. If the broccoli is not wet from washing, you may need to add a few mL of water into the bowl.
  4. 4. Add the macaroni to the boiling water; boil for about 10 minutes or until the desired tenderness is reached.
  5. 5. Dice the tomatoes, bell pepper, and onion.
  6. 6. When the macaroni is done, carefully drain the water using the strainer.
  7. 7. Stir all of the other ingredients into the macaroni. Serve hot or cold.

Output

You can expect ≈1.5kg of Rainbow Macaroni.

Description

One basic trick to getting a diversity of nutrients is to eat foods with a variety of color, and this pasta recipe is a simple outgrowth of that principle. I have many different colors represented—red, orange, yellow, green, and purple—and this combination is great for its nutritional content, taste, ease of cooking, and ingredient availability. It also seems to reheat well.
